Buffalo Chickpea & Seasoned Jackfruit Recipe

I love to play around in the kitchen and try out new recipes and combinations. Every other Tuesday, I will be posting the recipe creations I come up with to give you some new ideas. I randomly throw ingredients together in hopes that it will turn out and 9 times out of 10, it does. On that note, I don’t have measurements for the ingredients; I challenge you to let yourself play in the kitchen and let your creativity run wild. This is an easy recipe that takes less than 30 minutes!


As a vegan, I am always asked where I get my protein. Chickpeas, also known as garbanzo beans, are a great source of protein and fiber and provide a variety of vitamins and minerals.

Jackfruit is a low calorie fruit that makes a great substitute for meat due to it’s texture. Because it is an exotic fruit, it is hard to find fresh but is often found canned.

I used Trader Joe’s canned jackfruit for this recipe.

Ingredients:

Buffalo Chickpeas

  • 1 15-ounce can chickpeas (garbanzo beans)
  • Hot sauce (I used Franks Red Hot Original as it has only a few ingredients, all of which I know.)
  • Garlic powder
  • Pink Himalayan salt
  • Black pepper

Seasoned Jackfruit

Instructions:

  1. Open the can of jackfruit, drain and shred.
  2. Place it in a pan with some veggie broth and cook on medium heat for 10-15 minutes.
  3. While the jackfruit is cooking, open the garbanzo beans and drain. Note: you can save the aquafaba (garbanzo bean liquid) and use as a substitute for recipes that call for eggs or egg whites.
  4. Place the garbanzo beans in a pan with some hot sauce, garlic powder, pink Himalayan salt and black pepper. Cook on medium heat for 5-10 minutes.
  5. Add lemon juice, vegetable grilling seasoning, onion, garlic and chili powder, pink Himalayan salt and black pepper to the jackfruit and reduce heat for 2-3 minutes to let it absorb the seasoning.
  6. Place the buffalo chickpeas and seasoned jackfruit on a bed of greens (I used arugula) and barley (or any other type of grain). I topped it off with some of Trader Joe’s jalapeño sauce to give it an added kick.
