Breakfast has always been my favorite meal. When I’m on the go, I don’t always have time to make a full breakfast so I’ll grab a bar, smoothie or whatever I can quickly. Spending so much time at home lately does have its benefits. Since going vegan over four years ago, I have greatly improved my cooking and have really allowed myself to play with recipes. Tofu scramble is my go to breakfast when I have the time. It can be made so many different ways! In the last couple of weeks I have really mixed things up. The best thing about these scrambles is I just used whatever I had in house. Substitute whatever veggies you already have on hand!
Tofu Scramble #1
- Saute onions, mushrooms, tomatoes and kale in olive oil
- Once the veggies are softened, add crumbled tofu (I like to use firm)
- Add a little soy sauce, maple syrup, turmeric, black pepper & garlic powder
- Stir it all together & add vegetable broth or stock if it seems to be getting too dry
Saute the veggies Add tofu & spices Serve it up! (Also pictured: avocado + pepper jelly toast with everything seasoning + blackberries)
Tofu Scramble #2
- Saute onions, minced garlic & sweet potatoes in olive oil
- Once slightly browned, add crumbled tofu & green onion
- Add a little liquid smoke, sriracha, nutritional yeast, turmeric & black pepper
- Stir it all together & add vegetable broth or stock if it seems to be getting too dry
